I was thinking about candy apples and wondered if I could make apple mousse.  It was easy.  Get some granny smith apples, make a puree, and mix the puree with whipped heavy cream.  To offset the tart taste of the apple mousse, I used milk chocolate for the ganache instead of semi-sweet chocolate.  The milk chocolate ganache didn't set as well as I had hoped.  The cake used semi-sweet chocolate and some instant coffee crystals.  I used a stand mixer instead of hand-mixing and it added air to the mix and made it taller than I expected.
